Do you ever eat out in public or in class and you feel everyone looking at you? I so happen to have classes back-to-back-to-back so eating is class is just going to happen. It’s going to – embrace it, give it a hug..what are you waiting for?
I choose to eat granola bars which tend to be SUPER crunchy and an orange. Let me just tell you something, I have problems opening oranges. It’s true. I ALWAYS use a pen or pencil to poke a hole in it to start the peeling off and let me just tell you that will get you some crazy looks, folks. Who sticks pencils in oranges? Not crazy people, no, people who lack razor sharp fingernails and determination. Just hand me the dang pencil.
Good thing we have cookie dough. and love.
My friend Melissa and I had the opportunity to make some desserts for her sorority, but we didn’t have a mixer. I left my baby mixer at home, sleeping on the kitchen counter. So we pulled out our “guns” and stirred. by hand. I felt like a Pilgrim.
These ingredients are for TWO different desserts–so breathe. Love. Hugs all around.
The Peanut Butter Fudge Brownie Trifle is coming next. I’m so excited!
We made Cookie Dough Dip .
Cookie Dough Dip
(makes about 1 1/2 cups)
1/2 cup butter
1/3 cup brown sugar
1 8-ounce block of cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
3/4 cups chocolate chips
Melt butter in a small saucepan over medium heat.
Add brown sugar and whisk until sugar dissolves and mixture starts to bubble. Set aside to cool, and whisk in vanilla.
Cream together cream cheese and powdered sugar for 60 seconds ( or longer if you’re using a fork and a bowl. HELLO)
With mixer on low speed (or hands), add in brown sugar and butter mixture. Mix until combined. I added the chocolate chips at this time so the mixer could break them up into pieces. You can so that, or just fold in the chocolate chips after combining the butter and cream cheese.
Garnish with additional chopped chocolate. Serves with fruit, cookies, crackers, pretzels or a spoon.
