👤I can't give this one star because it's not zero. I've used the couche many times and my baguettes have stuck to it. I've made the couche with all purpose and rice flours. I've allowed for a longer bench rest and let the dough dry a little before placing the loaves on the couche. They still stick. I had success with the same dough in bannetons and had a smooth transition from the basket to the oven. I've given this couche too many chances. The material is porous. I had success every time I swapped to a heavier canvas.

I made some baguettes a week prior to getting this and then a week after it arrived, but I'm still not a good baker. The ones before were not bad, but a little flattened. As I moved the proven baguettes to the baking pan, they formed a slightly better crust. If you want to raise your bread game, you need to get this.
