I would recommend that buyers check to see where the kit they are ordering is going. The kit arrived on time. The kit's items are of good quality. I've used it three times. There should be directions in the kit. The banneton baskets must be seasoned with flour that does not contain any wheat. When you try to proof your dough, low-gluten flour like rye will make it sticky. You need to mist the basket with clear water and cover the inside of it with rice flour to dry it. I think the kit is great. The items are well-constructed and durable. The leather sheath on the razor blade on the left doesn't stay on, that's the reason I didn't give it 5 stars. When I reached into the bag, I removed a chunk of skin from my knuckles. The sheath should be kept in a separate bag to prevent it from coming off in the storage bag.

I have never used the Bannetons before. I understood that they need to be seasoned with a flour free type of flour before they are used. I used rice flour to season mine. The only thing that I noticed when unpacking was that the gift box wasn't included. I contacted the company and am hopeful that they will send me the instruction manual PDF with a QR code. I am not sure if I will use the stencils for my bread, but I can use them with other things. Silicone Baking Mat are wonderful with the size guidelines on them and they clean up very easily. The hand brush is made of silicone. It becomes a nice cleaning tool if you put a bit of dish soap on it. The extra blades and bread scoring took a bit of getting used to, but once again, they are easy to use and I am very happy that there is a leather cover for the blades to keep from cutting fingers! The cotton bread bag is nice. I wanted one of those for a long time. They are great for baking. The metal scraper I use for cutting the dough into pieces is from the Bannetons. The scraper is made of plastic. This kit is a great one and it is fairly priced. Some of the people who posted negative comments didn't try this or didn't contact the company with any concerns, I feel that they didn't take the time to try this. I like the kit. If you do sourdough baking for yourself, I would recommend it.

👤I like the size of these pans. They are more narrow than the average home loaf pan. I think there is more sandwich sized. It allows for more slices per loaf and I love using it for quick breads. I have a couple of pictures of my old loaf pan for comparison. The loaf of banana bread in the new pan is a normal loaf recipe, and it only fills the pan about halfway. Everything I've made so far has turned out perfect, because I adjust cooking time. If you wanted a taller loaf or more serving, you could probably double the recipe in one pan.

👤Why didn't I know about this a long time ago? I make my own bread. I like the idea of making bread with 6 ingredients. I know how to say flour, water, yeast, sugar, olive oil and salt. I only had one problem, I had to use a loaf pan or make fat french bread loaves. I found this type of device on a kitchen supply site. All of the websites that I found advertised them for less than $125. Flat loaves aren't that bad in comparison to what I would need to spend for one of these. It was called a bread shaper after learning what it was. I found it on Amazon for a good price. Two loaves of my "no-knead" bread formulas are made. I want them to do their final raise. They are formed in the oven. These are a necessity for those of us that have a life and want to not have to spend a lot of time trying to get a decent loaf of bread that can be used to make sandwiches that are more than 2 inches tall.

👤I spent over an hour trying to clean the pan after the bread came out of the oven, even though I was told it was non-stick. You have to scoop the dough into a form to make a loaf of bread. If you attempt to form a loaf from the dough and place it on a baking sheet, it will come out of the oven 12 inches wide and 1 inch high. I was told to get the pan. The width of the form is too wide to solve the problem. I ended up with 1/2' tall flat baguettes that were 6' wide because there is no pan edge. The pan will work with wheat flour. We have to keep looking because this is not the pan for making bread or baguettes of any kind.

The bread seems to bake fast in this pan. For a basic bread dough, 2 loaves bake in 10 minutes at 400F. The pan is a game-changer. You can bake in the same pan and have bread with a crisp top and bottom. It seems to bake quicker than a cookie sheet.

👤I used this pan for the first time last night. I have been baking for over 50 years and recently decided to try more yeast and sourdough bread baking. King Arthur Flour is a great source for baking help and suggestions. The small loaf pan is highly recommended by them and Cook's Illustrated. I ordered this pan because I only had a 9” Pyrex loaf pan and a 9” metal pan. King Arthur Flour has a logo on the bottom of the pan. I made my first loaf of sourdough sandwich bread and it came out great, and tastes even better. I turned the pan upside down to drain and air dry after washing it. Imagine my shock when I discovered rusty water in the corners of the pan after I turned the pan over and put it away. I collected the paper towel after blotting it up. I tried to take a picture of it. I looked at the rolled edge when I turned the pan upside down. The rolled edge can collect water. I can see rust under the edge. I think the reinforcing wire might not have been coated and it might rust. I don't like the rust. The reviewer suggests that the pans be put into a 200' oven to dry the rolled edge, as there is no way to dry it. I will have to try this. I would appreciate it if USA Pan could give me a better way to care for my pan. If the pan is damaged or scratched, I worry that it will rust. I know that metal tools are not used. How durable is this pan? I hope the manufacturer and other users can clarify.

👤I make all my bread and my old loaf pans have been there for a long time. I wasIntrigued by the design and the part that was made in the USA, so I bought the small. The USA Pans pan loaf is very sturdy and heavy. My loaves get nice bloom and bake beautifully and evenly, because of a very light greasing. It was larger than my old one. The loaf pans are standard. My loaves leave no trace. They don't have any lip on the far ends, so you need two hands to raise it out of the oven, and in de-panning the loaf, there's nothing to grab onto with one hand. I've come close to burning one or both hands in removal or depanning and it's just very awkward. I like the pan a lot and that very real complaint is not true. To work out the awkward handling issues. A very even, tender crust is also developed by finished loaves. I filled my loaf pan with water to see if the corners would leak, and after 10 minutes, they didn't. I highly recommend you get it, because it's difficult to handle the hot pan until you figure out how to do it safely. I anticipate a long time out of this bread pan.

👤I wanted a cast iron loaf pan as a gift. Lodge was sold out in store and online so it would take too long for shipping. I thought it would be a great option. I didn't look at the lowest rated reviews. I opened the package before the party to find the truth. There is packaging The box is not the correct size for the pan. It is cheap cardboard and poorly printed. It looks like something you would find in an ultra discounted store that has been used and returned. The pan was wrapped in a new kitchen cloth that I was also giving as a set to make it look better. I immediately contacted Amazon to get the item back. The pan is very rough. Cast Iron is not smooth like ceramic, but it is relatively uniform. This pan is not like that. It feels like cheap paper. The pan has very sharp pieces jutting out from all sides. There is a lot of black on the pan. I assumed it was just seasoning, but it seems to be iron. The handles are flimsy. There is a cancer warning on the box. I saw no mention of this in the description of the box I received. This pan came with an instructional guide on how to clean, use and maintain a cast iron pan. It printed both upside down and backwards. The letters are on the inside. Please don't buy this product if the images are uploaded to this review. It's a waste of time and could be dangerous.

👤It is better to do it old school. I love cast iron pans. I bought 5 pans for baking bread several years ago. Five pans are perfect for turning a bag of flour into loaves. I ordered a matching addition even though I wanted just one more. It was just as good. I need to work on building up the perfect cure but cast iron is easy to use and will not take long. The first loaf of bread was clean. To remove water from cast iron, you should wash it, put a light coat of oil on it, and then dry it on the stove. A cast iron pan will become a dream after a few times. The cured oil will smooth out any texture left from the sand mold casting process and create a stick free surface.

👤I bought these pans to use. It is important to note that a 9x5 pan made in the USA is 5 inches from edge to edge and 9 inches long on the top and 7.5 on the bottom. These pans are made in China and have an edge to edge and bottom that is 4.5 inches wide. The length is a full inch longer. If you are used to making bread or loaf cakes in a USA made 9x5 these will result in lower than usual rise as a result of the extra width and length.

👤I love these! I bake banana bread with them and it always comes out perfect. They are easy to clean. If you have cakes or bread that stick, try coating the inside of the pans with butter and then some light coating of all purpose flour before you add your batter. Before adding the batter, you can put the paper inside. It works for me.
