👤Don't buy this if you want to make high hydration doughs. It arrived bent. I work with metal. I know cheap sheet metal products. I could have bought a piece of sheet metal and cut it myself. It's not as good as the picture would suggest. Strike one. I wanted to avoid having to move the dough after proof. The dough overflowed for less than 1 kilo of dough. Strike two more times. The bread was almost impossible to get out of due to the holes in the bottom. Maybe it works well for baguettes, but not for Italian style loaves? Buy a couche.
👤I enjoy buying items made in the USA. The only thing wrong with this pan is a design flaw. The sides of the pan are lower than the central ridge. The pan will overflow because of the low sides. If you use wet doughs, you will have to use a paper sling with its ends stapled together over the central ridge. You can fix the problem by placing the pan on a large plastic cutting board or on top of a large kitchen towel, then gently pressing down on it from the end of the central ridge. I didn't see any damage done to the pan, but this modification may void your warranty. The way the pan was manufaured would not work for a range of bread doughs.

👤I'm pretty sure this doesn't make it un-useable, but the video shows it in a long tube. The mat was larger than the box it was in. The mat has a permanent crease down the middle, as well as some rippling, because it was folded in fourths. I rolled it up after removing it from the box and hoping the creases would come out. It was rolled for a couple of weeks after purchase and I have never used it. The photos show that it is still creased and rippled. The package says it should not be stored in a flat fashion. Why did it fold up in fourths?

👤The plastic pie mat broke recently. This was purchased as a replacement. It's easier to use and it doesn't stick to it. I've already made pizza crusts, bread, and 2 apple pies using this mat. I like the size of the guides. It's not like my old mat. I'm still figuring out the most efficient way to clean it, and I think wiping it off with some soapy water and then rinsing it with a sponge or cloth is the easiest way to do it. The other way is to put it in the sink and roll it with a towel. It has a band to hold it closed if you lose it, and it rolls up for storage. I put some flour on it when I roll a stickier dough, but have no problems sticking it. I love it!

I'm not sure if that made a difference in the baking process. I baked a white loaf of bread in each pan, from the same batches of dough, and they turned out the same, except for the shape. I lightly oiled the pans before putting the dough inside. The Chicago pan stuck when I tapped it out, but the USA pan just plopped out without a tap. I made wheat bread after the photos were taken, but it stuck to the sides of the USA Pan. The USA Pan is similar to the Chicago pan in shape. I've used them 10 times already, but they've only been used less than a month. The USA Pan's seams are more precise than the Chicago pan's. I don't know if it's the one I received. Water gets caught up in both of them, this is the way of loaf pan, it's the way of it. I lay them out in the dish rack to drain the water from the seams. The USA Pan is a better pan than the Chicago pan, and I like that anyone using it wouldn't need to use a knife to remove the loaf.

Buttering the pans can get dangerous if they are too heavy because they become stuck together, and it can be difficult to separate the pans before buttering them. Although they say they are dishwasher safe, these pans will still be bread pans when they come out of the dishwasher. They are all discolored and coated in dark grey oxidation that is on items that aren't meant for the dishwasher. Your breads and hands are affected by the discoloration. As a commercial baker, it's not convenient to wash pans. They are good sturdy pans that would be great for a home baker who only makes a few loaves at a time and could hand wash their pans. I have other Chicago pans that I absolutely love, but I'm not happy with the ones I have.

👤It's okay. The banneton does have splinters, the way they sewed the liner creates too thick of overlap on top of the loaf, and it's clearly cheap and the metal has already discolored, but it's a nice extra. Next time, I would buy a different brand.

👤I bought a full set of these products and thought they were the best invention yet. Is it possible to have cupcakes without cupcake liners? Yes, please! Do you mean cakes that fall out of the pan without a lot of butter? Sign me up! I regret stocking my kitchen with these products. These are not easy to clean. Even after a good scrubbing, the silicone material seems to cling to it. The worst part is that if you run these through a dishwasher or let them soak in soapy water, the silicone material will absorb some of the detergent, giving a soapy taste to baked goods. The lid makes it possible to bake a uniform loaf of bread. It stayed in place while baking. It was easy to remove. I thought I would start with 1lb of dough, but it only filled the pan about 60 percent, so I went back to reading that the pan baked 1lb of dough. I made a 1.5lb loaf and a 2lb loaf which both worked, but 2 lbs of dough will fill the pan nicely. The 1.5lb loaf is next to the 2lb loaf and you can see that the 2lb loaf filled the pan more than the 1.5lb loaf. I baked my loaves at 350 for 35 to 45 minutes. I have a metal bread box, but I also purchased a LOCK & LOCK HPL849 bread storage container, which you can see in one of my photos. It is not large enough to fit 2 full loaves, but it will fit at least 1.5 loaves. I have a bread box and it has a bread container inside it. The 2lb loaf was easier to slice than the 3 loaves I have made so far. I was able to slice the bread into very thin slices. I want to be able to cut more consistently sized slices. 👤I like the size of these pans. They are more narrow than the average home loaf pan. I think there is more sandwich sized. It allows for more slices per loaf and I love using it for quick breads. I have a couple of pictures of my old loaf pan for comparison. The loaf of banana bread in the new pan is a normal loaf recipe, and it only fills the pan about halfway. Everything I've made so far has turned out perfect, because I adjust cooking time. If you wanted a taller loaf or more serving, you could probably double the recipe in one pan.
