👤Don't buy this if you want to make high hydration doughs. It arrived bent. I work with metal. I know cheap sheet metal products. I could have bought a piece of sheet metal and cut it myself. It's not as good as the picture would suggest. Strike one. I wanted to avoid having to move the dough after proof. The dough overflowed for less than 1 kilo of dough. Strike two more times. The bread was almost impossible to get out of due to the holes in the bottom. Maybe it works well for baguettes, but not for Italian style loaves? Buy a couche.
👤I enjoy buying items made in the USA. The only thing wrong with this pan is a design flaw. The sides of the pan are lower than the central ridge. The pan will overflow because of the low sides. If you use wet doughs, you will have to use a paper sling with its ends stapled together over the central ridge. You can fix the problem by placing the pan on a large plastic cutting board or on top of a large kitchen towel, then gently pressing down on it from the end of the central ridge. I didn't see any damage done to the pan, but this modification may void your warranty. The way the pan was manufaured would not work for a range of bread doughs.

The mat has a permanent crease down the middle, as well as some rippling, because it was folded in fourths. I rolled it up after removing it from the box and hoping the creases would come out. It was rolled for a couple of weeks after purchase and I have never used it. The photos show that it is still creased and rippled. The package says it should not be stored in a flat fashion. Why did it fold up in fourths?

👤The plastic pie mat broke recently. This was purchased as a replacement. It's easier to use and it doesn't stick to it. I've already made pizza crusts, bread, and 2 apple pies using this mat. I like the size of the guides. It's not like my old mat. I'm still figuring out the most efficient way to clean it, and I think wiping it off with some soapy water and then rinsing it with a sponge or cloth is the easiest way to do it. The other way is to put it in the sink and roll it with a towel. It has a band to hold it closed if you lose it, and it rolls up for storage. I put some flour on it when I roll a stickier dough, but have no problems sticking it. I love it!

👤I wanted to make New England style hot dog buns that were longer, so I bought 2 of these. I make enough bread dough for a loaf. I put half of the dough in each loaf pan, pressing it into the bottom to spread it out. I allow the dough to rise for about 30 minutes. I sealed the pans with foil after brushing the dough with milk. They go into my oven at 350F for 15 minutes, then I remove the foil and let them bake for another 10 minutes or so, until the internal temperature is 190F. After removing it from the oven, I need to cool it off for 10 minutes, then I need to cut it. It's easy to cut them into buns. You need to cut a thin slice off the loaf. You slice the loaf in half. Then slice each half into 3 equal pieces. 6 bread slices are half the height, but twice as thick as a normal slice. Carefully cut a slot into the top to make sure you don't cut too deep. Pan toast the buns with a little butter, stick one of those longer length hot dogs in the slot, and add your topping.
👤The product is smaller than described and doesn't look like the photo. The loaf pan shown in the picture is the same one I own. It is a great pan. Many bread recipes are enough for 2 loaves, so I wanted to buy a second. The product that arrived is smaller and can fit into the original pan as shown in the photos. It doesn't have the measurements written on both ends. I will not use it and will return it.
👤I made banana bread with almond flour and it came out perfect. I grease the pan with butter since almond flour sticks. I put the loaf down on the plate and it fell out. The food was cooked in the correct way. There was no sign that anything had ever been in the pan. I'm not going to put it in the dishwasher. I washed it out and dried it. So easy!
👤An excellent pan. After baking, everything slides out of it. If it's left in a pan for a few hours to cool, nothing sticks. The cake is moving. Never sticking. If batter is baked on to the rim, you can wipe it off. I use a soft sponge with dish soap and water to clean it. I wash this pan by hand. I love it!
👤Don't buy any other loaf pans. I'm 61 years old and have been a cook and baker my entire life and have owned a lotta loaf pans. These are great! Heavier than most and non-stick! The handles are a plus. Do yourself a favor and wash them, the harsh chemicals in dishwasher detergents are not good for non-stick cookware. It will be easy to wash these pans. They look like silk.

👤I have been making bread for 30 years. 6 months ago, I purchased 2 of these pullman pans and have used them weekly. The heavy duty pans are very good. I have not had a problem with rust/scratching despite some reviews. Every time, I use a recipe from 1906 from the Chicago Tribune for a 9” pan. The logo should be left in the top of the loaf because the lids fit well. I treat the pans and lids the same way I treat my century old cast iron. After releasing the loaf, I wipe the pans and lids down with a damp cloth, then place them back in the hot oven to cool. The performance is affected by these little extra steps.
👤I have made a few Pain de Mie using this pan. I initially liked the pan, but have come to realize that it must be better quality in the U.S. No, no. The loaf of Pain de Mie exploded the poorly fitting top off of the loaf pan and the pan material bent in the oven after about the 6th use. The lips around the pan are weak and poorly formed. I am far beyond a simple amateur baker and was using a standard Pain de Mie for this pan. French or Chinese imitations are much better than the ones you buy in the US. I have several of those and they have held up better than this pan. "Made in the U.S." Not true at all.
👤I have a pan loaf in my kitchen that has baked at least 20 loaves. The loaf pan was chosen for its size. A 2-lb. is the size of most of my recipes. The top of the loaf is close to the edge of the pan. The slices turn out larger than I wanted. These are what I wanted. The quality has held up well. The finish isn't a "no-stick" finish. You need to grease it, but I have not had a problem getting it to release the loaves. The pan isfolded into shape, and that leaves tiny vertical grooves in each corner that tend to accumulate a build-up of old crust. I suggest you keep some bamboo skewers with you if you buy this item. They are the right people to clear out those grooves.
👤I bought the pan to bake the sourdough with the lid on so I could get the bread as square as possible. My best loaf yet was produced by the pan. The loaf baked perfectly after the lid slid off. I've done my test bakes and will be buying more.
👤This extra long pan is great for bread making. I use a bread maker to bake my bread. I don't have to use the oven in the summer because it's summer. I have not been able to get a loaf of bread that sustains the rise. I thought I needed to change my recipe, but nothing changed. The 9 inch pan that I purchased isn't big enough. I get a bigger loaf with this pan, but it stays up. I have stopped using the bread maker. After many loaves, I have changed my recipe. I found that using more water made the loaf taller. I reduced my flour mix to 5 cups. I use 3 eggs instead of 4. I use 4 tbs. There is Psyllium Husk powder. 2 cups of salt. There are 1 1/2 scoops of milk powder. The large box of milk powder has a scoop in it. 1 cup. There is 1 1/2 cups of yeast. 3 cups of baking powder, 3 cups of cinnamon, and 3 cups of honey. 2 cups of water and olive or cocoanut oil. Place it in a pan, push it into it, then score the top with a knife. I place the pan on the top of the oven to get it ready for the oven to warm up. I have a loaf of bread that is tall. I toast it at a short interval. The slices shrink just enough to fit on the side of the bread that is on high. I now have some nice slices to make my sandwiches with. I use a Lock & Lock and pre mix my flour so that I don't have to mess with it when I want to make a loaf or a pizza. My flour mix is comprised of 2 cups of brown rice flour, 1 cup of potato starch, 1 cup of millet or sorghum flour, 1/2 cup of buckwheat flour, and 1/2 cup of ground roasted, unsalted sunflower seeds. I can fit 3 batches into the bin with the large Lock & Lock. A lot of ingredients, but a structured loaf. I just bought another one of these pans. I like the larger size so that I get more slices. The first one lost it's non-stick feature, so I reduced this pan a bit. I have to spray it. I don't use the pan at more than 350 degrees.
